Signia by Hilton Atlanta Launches Exclusive Fine Dining Restaurant, Capolinea

New restaurant pays ultimate homage to Italian-American cuisine complemented by locally sourced ingredients

ATLANTA – Today, Signia by Hilton Atlanta announced the highly anticipated grand opening of Capolinea, its signature Italian-American fine dining restaurant. Led by Executive Sous Chef Jeuel Ortiz, Executive Pastry Chef Daniella Lea Rada, Beverage Director Evan Sewell and Sommelier Marvella Castañeda, the elegant restaurant offers delicious handmade pastas, traditional Neapolitan pizzas and desserts decadent, made with local ingredients from regional suppliers. Dishes are complemented by an extensive wine and cocktail program, including prosecco on arrival and immersive tableside martini service.

An Italian homage with Georgian touches

Chef Jeul has artfully crafted a menu celebrating the flavors of Italy that draws inspiration from an abundance of high-quality ingredients sourced from across Georgia. Regional vendors include The Spotted Trotter, Ellijay Mushrooms and Engelman’s Bakery, among others. Before opening Capolinea, Chef Jeuel visited farms throughout the state and traveled to several northern Italian cities, including Bologna, Florence and San Marino, which helped him in his research into menu development and restaurant concepts, helping to position Capolinea as one of the most anticipated restaurants. openings in the city.

Guests begin each meal with the restaurant’s signature bread service, featuring house-made brioche, Castelvetrano olive sourdough and a variety of Italian-inspired butters, including olive oil and Calabrian chili prepared daily. To start, diners can choose from a range of curated meats, freshly prepared salads and antipasti, such as a Halibut crudo, with pickled squash, lime, citrus and avocado, or an Italian-American favorite, Beef carpaccio. Main courses cover nostalgic dishes with a twist, like Anatra Ravioli prepared traditionally, but topped with kumquat gremolata, or Limone Ricotta Gnudi, with Georgia shrimp, ricotta dumplings, 30-month aged parmesan and dill. Diners will also be able to enjoy a selection of Neapolitan pizzas, made with a crust of live cultured flour leavened for two days, or heartier dishes, including a Whole Branzino. Local and regional touches are found throughout the menu with Ellijay mushrooms, serving as the base for Fritto di Funghi, with sweet Georgian honey served with Salumi and Formaggi.

For a sweet ending, pastry chef Daniella Lea Rada and her team have created stunning desserts that pay homage to Italy, including modern takes on the traditional cannolicomposed of whipped Fior di Latte ganache, Adona cauliflower, Clementine gel and bergamot sorbet and Take a coffee, made with whipped mascarpone ganache, espresso mousse, dulcetto al amaretto and 80% gelato al cioccolato. Plus, no Capolinea meal would be complete without one of these confectionery creations, refined pastry classics or seasonal homemade ice creams.

Lively Drinking Experiences

Complementing the menu, beverage director Evan Sewell and sommelier Marvella Castañeda have created an unforgettable drinking experience for locals and guests. Capolinea’s wine program includes approximately 2,000 bottles of wine with a curated selection that begins with Italy, celebrating the rich tapestry of flavors and stories woven by small artisan winemakers and large benchmark producers. The wine list has been carefully curated to complement the flavors of Italian cuisine, from robust reds from Tuscany, perfect for pairing with hearty pasta dishes, to crisp whites from Friuli, ideal for sipping with seafood. Additionally, the Capolinea Collection includes wines from the lush vineyards of France to the sunny valleys of California and beyond.

The real highlight is Capolinea’s tableside martini set, featuring a sleek cart with a selection of Atlanta’s coldest martinis. The restaurant uses liquid nitrogen to cool and garnish the glass at -350 degrees to ensure a frozen cocktail every time for this interactive and personal cocktail experience. Highlights include Gabagol martini, made with capicola and spicy salami-infused Ketel One vodka, Fino sherry and vermouth, garnished with a sun-dried tomato and a ricotta-stuffed olive, plus Capolina martini, with vodka washed down with olive oil. In addition to martinis, diners can also sip on a selection of appetizers, including the Ice Cream topped with burrata mousse or a range of signature cocktails and non-spirit selections.

Sleek design

Located on the fourth floor of the hotel, upon arrival at Capolinea, guests are immediately drawn into the hotel’s elegant and intimate dining room, featuring dramatic moldings and dazzling light fixtures, complemented by stunning skyline views from Atlanta. Throughout the bright, naturally lit restaurant, guests can find comfortable spaces, complete with stylish booths and booths, providing the perfect spot for a date night, celebration, family stopover or business meeting.
