Dead rodents, over 100 rodent droppings among 45 violations found in a restaurant!

Last week we had one of the worst inspections we have seen in a long time.

The Cayo Esquivel Seafood Restaurant and Market in Hialeah Gardens was closed last Wednesday and the inspector found 45 violations!

A rodent was also spotted at Saveur Tropical in Pompano Beach.

According to records, this is the second time Saveur Tropical has been ordered to close.

Below is a list of the places that have been ordered to close and some of their violations.

All of the above-mentioned locations were allowed to reopen after ordered cleanup work and a subsequent re-inspection.

“Rodent activity present as evidenced by rodent droppings found. 1. Approximately 35 rodent droppings were observed on the front counter on lower shelves next to cleaned cups and bowls. 2. Approximately 15 rodent droppings were observed under the cooler and under the hand sink across from the cook line in the kitchen. 3. Five rodent droppings were observed on and under toilet paper on the lower shelf of a storage rack in the dry storage area. 4. Approximately 15 rodent droppings were observed around the water heater in the dry storage area.”

“Accumulation of mold-like substances inside the ice cream maker.”

“Stop sale of time/temperature controlled food safety equipment due to temperature abuse. Time/temperature controlled food safety equipment held cold above 41 degrees Fahrenheit. Cooked pork (47 degrees Fahrenheit), turkey (50 degrees Fahrenheit), and corned beef (48 degrees Fahrenheit) are stored in a two-door cold room across from the cook line in the kitchen.”

“Employee cracked raw eggs in the shell and then touched ready-to-eat food and/or clean equipment or utensils without washing hands. Employee cracked two raw eggs in the shell and then touched bread without washing hands.”

“Employee touched bare body parts and then began preparing food, handled clean equipment or utensils, or touched unwrapped single-serving items without washing hands. Employee rubbed nose with gloved hand and then handled bread without washing hands. Repeat violation.”

“The dishwasher chlorine disinfectant does not have the correct minimum concentration. Stop using the dishwasher for disinfection and institute manual disinfection until the dishwasher is repaired and properly disinfected. Dishwasher chlorine disinfectant, 0 ppm.”

Approximately 7 live roaches observed crawling on the floor under the 3-compartment sink in the kitchen area. 1 live roach observed crawling on the floor under the prep cooler at the cook line. 3 live roaches observed crawling on the floor under the dishwasher in the dishwashing room.”

“Rodent activity present as evidenced by rodent droppings found. Over 100 rodent droppings were observed throughout the dry storage area under shelves and pallets where canned products, dry goods, utensils and equipment are stored.”

“Food contact surface contaminated with food debris, moldy substances, or slime. Can opener observed contaminated during preparation in kitchen. Blender observed contaminated in preparation area in kitchen.”

“Floor dirty/with accumulation of dirt. Extreme contamination was found in the dry storage room.”

“Bowl or other container without a handle used for dispensing food. Container without a handle observed in rice bin near walk-in cooler.”

“Used non-time/temperature control food safety utensil that was not stored in a clean, protected location. Observed use of a bucket to transport fish that was stored under a hand-washing sink and exposed to splashes.”

“Sales stopped due to adulteration of a food product. I observed 10 packages of raw tuna and 10 packages of kingfish that were vacuum packed and no longer frozen. According to the operator, it had been frozen for more than 4 hours. And the instructions on the packaging were not followed.”

“Stop sale of time/temperature controlled food due to temperature abuse. Yellow rice (49°F – cold storage); Marcela sauce (47°F); sweet potatoes (48°F – cold storage); boiled potatoes (47°F – cold storage); tomato sauce (49°F – cold storage); coleslaw (47°F – cold storage); snapper (48°F – cold storage); calamari (47°F – cold storage) observed in walk-in cooler.”

Cooked rice and beans, ceviche, yellow rice, sweet potatoes, and cooked potatoes were observed in the walk-in cooler without date labels for more than 24 hours. Cooked octopus was observed entering the cooler through the cooking line without date labels for more than 24 hours. Repeat violation.”
