New Restaurant Alert: All Roads Pinseria + Enoteca opens July 26 in Brentwood

Roman-style restaurant offers unique pinsa and Italian specialties as well as Italian wines

Exciting news for the Westside: All Roads Pinseria + Enoteca, a new restaurant inspired by Roman cuisine, will open its doors at 145 S. Barrington Avenue in Brentwood on July 26, 2024. The restaurant, the result of a collaboration between Toscana Restaurant Group and three dedicated chefs, will bring a unique blend of traditional and modern Italian dishes to the Brentwood neighborhood.

On the menu at All Roads is the Roman pinsa, a dish often compared to pizza but made with a unique dough blend of rice, soy and wheat grains. This ancient recipe produces a crust that is both crispy and airy, and contains less gluten and sugar than traditional pizza.

The pinsa selection at All Roads ranges from the popular Margherita Bianca (fiordilatte mozzarella, parmigiano, challerhocker, caramelized onions) to the Rossa adorned with Cantabrian anchovies to meatier options like a mortadella (mortadella, pistachios, salsa verde, fior di latte mozzarella, burrata, pecorino) and spicy salami or guanciale variations.

In addition to pinsa, the menu also includes hot hero sandwiches, panini and various salads. Sandwich options include the Colosseo with burrata and grilled zucchini and the Pantheon with mortadella and fresh mozzarella. The place also serves Roman street food such as supplí (carnaroli rice, mozzarella, tomato sauce, basil) and from Rome’s Jewish quarter. Area, Carciofi alla Giudia (fried baby artichokes, pecorino, chives, aioli).

Originally from Verona, Italy, Chef Luca Crestanelli holds degrees in gastronomy and culinary arts, traveled the world to learn and learn about culinary specialties, and eventually settled in the United States where he worked under the tutelage of Master Chef Nicola Mastronardi at Vincenti Ristorante in Brentwood. In 2010, Chef Luca was invited to help Kathie and Mike Gordon open Bar Toscana next door to Toscana Brentwood.

Chef Marco Longinotti began his self-taught cooking career in an Italian kitchen with his grandmother. He later cooked for friends while working at another business. When he decided to leave everything behind in his native Italy and start over in California, that changed forever. After four years as a chef at SY Kitchen in Santa Ynez, he was given the opportunity to join Nella Kitchen & Bar, where he took on the position of executive chef and takes full responsibility for the Pinsa program.

Chef Justino Quirino left his native Oaxaca, Mexico for Los Angeles at the age of 18. In the two decades since, Chef Justino has absorbed cooking techniques from his mentors, former Toscana Chef Piero Toputto, Il Fornaio’s Maurizio Mazzon and Chef Luca Crestanelli. He has worked his way up from dishwasher at Toscana to executive chef at All Roads and executive chef at Bar Toscana.

All Roads’ beverage program, curated by wine director Roberto Facciolla, features an extensive list of Italian wines as well as a selection of beers custom brewed by SLO Brewing Co. Non-alcoholic options include Italian soft drinks from Paoletti.

Inspired by Rome’s historic Tor di Nona district, the restaurant’s ambience features a warm color palette and quirky decor, including a graffiti depicting a flying donkey as a symbol of community and celebration.
