Why 2,000 Cheesemakers Went to Buffalo This Week

BUFFALO, N.Y. — Buffalo was cheesier than ever this week, as the American Cheese Society held its annual conference in Buffalo.

The four-day conference brought together nearly 2,000 cheesemakers in Western New York for cheese tastings, learning sessions, certification testing and competitions at the Buffalo Convention Center.

“What I loved about Buffalo is that you have companies like Lactalis, a $4 billion global cheese maker, but you also have some really unique and fun small artisan cheesemakers from the Finger Lakes region, which is not too far away,” said Jessica Little, the company’s vice president.
