It takes about 45 minutes to build one of Tiny Lou’s tallest pancake cakes.

“But it’s worth it. It’s absolutely worth it,” says executive pastry chef Charmain Ware, who took over the restaurant’s pastry program in 2021.

The path to becoming a pastry chef was not easy for Ware. It wasn’t until a serious car accident left her bedridden with enough time to watch baking shows on Food Network that Ware realized she wanted to try baking herself. So she enrolled in a culinary arts program through City of Refuge and eventually got her break in baking while working under Zeb Stevenson at the now-shuttered Parish.

“I just want to create fun things that make you dance in your seat,” Ware says. “I want you to eat it and taste all the love, emotion and laughter that went into creating this with me and my team.”
