Buffalo Recipes for the Day: Cake Mix Cookies

The Niagara Falls Culinary Institute shares a recipe with us every week on Daytime Buffalo.

Here’s how to make this week’s recipe, Cake Mix Cookies.


Ingredients

  • 1 box (15.25 ounces) cake mix
  • 1/2 cup oil or 8 tablespoons melted butter (one stick)
  • 3 large eggs
  • Optional mix-ins: chocolate chips, M&M’s, Rolo’s, etc.

Instructions

1. Preheat oven to 350°F. Line a baking sheet with a silicone mat or parchment paper and set aside.

2. In a large bowl, whisk together the cake mix, oil, and eggs until well combined. If you have time, refrigerate the dough for 15 to 20 minutes (this will make it a little easier to work with, as it is sticky).

3. Using a medium spoon or peel, drop the dough onto the baking sheet. Top with additional toppings, if desired.

4. Bake for 9 to 11 minutes or until cookies are cooked through. They should not brown.

5. Let cool for a few minutes on the baking sheet, then transfer to a cooling rack. Store in a covered container for up to 3 days.
