Cafe Construction: PERC Cafe in Atlanta, Georgia

Each Build-Out is a treasure, a special snowflake, a unique story expressing something unique and precious. But only this Build-Out contains the mind-blowing news that after all these years, PERC Coffee of Georgia is, in fact, an acronym.

We’ve long thought it was, you know, a Central Perk-style “cheerfulness” game, with the stimulating effects of coffee and caffeine long established. But no. Turns out PERC Coffee actually stands for – wait for it – Panther’s Eye Roasting Company. We had no idea. But now it’s here – and that’s the power of Build-Outs as we take a look at the newest PERC site in Atlanta, Georgia.

DONA advertises the other half of Specialty Coffee

The Build-Outs of Coffee 2024 are presented by Ceado and Dona. The 2024 Build-outs of Coffee are sponsored by Pacific Barista Series, La Marzocco and Ghirardelli.

As Philip Brown told Sprudge.

For those who don’t know, can you tell us about your business?

Panther’s Eye Roasting Company started in Savannah, Georgia in 2010. It became clear that we needed a shorter name and luckily the acronym PERC worked very well. Back then, it was a one-man show with a roaster, a dream, and a stereo blasting. Today we have six outlets and we have over 100. Our mission is to share good times and great coffee with people at every stage of your coffee journey. We are growing a business rooted in passion, excellence, hospitality, inclusion and, above all, fun.

Can you tell us a little about the new space?

announces new coffee rules now available

The new location is a bright and welcoming space designed to make you feel at home. Right from the start, you are greeted by a super fun mural on the front of the building. The party continues inside with brightly painted walls, upbeat music, a fun atmosphere and a fantastic team of coffee professionals ready to offer you all the warmth and hospitality you can possibly need.

We offer all the classic coffee drinks and fun signature drinks, like the Good Times Latte. A latte with house-made lavender and vanilla syrup and a sprinkle of habañero sugar on top is a must-try. We always offer three single origin coffee options: a mild coffee, a wild coffee, and a limited release coffee. Mild and wild versions are offered as drip, flash, and espresso, and limited versions as hand brew. You can try them all with the coffee flight!

Our gourmet menu has something for everyone. In the baking box we have tasty treats like donuts and pastries. We offer smaller dishes like granola and cereal bowls. If you want something more substantial in your belly, we offer breakfast sandwiches and the almost world-famous Breakfast Crunchwrap.

I’m super excited about the new store and we’re ready to party with the people of Chastain. So hop on a plane or train or whatever and come hang out with us.

What is your approach to coffee?

We believe that good coffee should be both accessible and great fun. We only source, roast and share coffees that we are totally crazy about. We make personal connections with people through a big dose of hospitality to break down the barriers people may have with specialty coffee. What’s important is that everyone is invited to the party, because there’s no party like a PERC Coastal Party, because a PERC Coastal Party doesn’t stop.

Machines, coffees, special equipment waiting?

We have a La Marzocco Linea PB with scales, AeroPress, Mazzer grinders and a Curtis coffee maker. We will offer rare, limited release coffees in the form of hand brews that will change twice a month.

What is your target opening date/month, hopefully?

June 8

Do you work with artisans, architects and/or creatives that you would like to mention?

Our creative team, led by the infamous Braddy the Baddy, designed the space in-house. He worked with owners Philip Brown and Amber Foreman to bring this vision to life. We also work with local architects and our GC, Tom Pela-something.
